A rich and creamy vegetarian pasta dish made with cheese tortellini, sun-dried tomatoes, and parmesan in a silky herb sauce. Perfect for date night or weeknight comfort.

Ingredients

  • 1012 oz cheese tortellini
  • 2 tbsp olive oil (or oil from sun-dried tomatoes)
  • 34 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, finely chopped
  • 1 cup heavy cream (or coconut cream)
  • 1/2 cup vegetable broth
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated parmesan
  • 12 cups baby spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Cook tortellini until al dente, drain, and set aside.
  2. Sauté garlic and sun-dried tomatoes in olive oil for 1–2 minutes.
  3. Add cream, broth, herbs, and red pepper flakes. Simmer until thickened.
  4. Stir in parmesan, then add tortellini and toss to coat.
  5. Add spinach, cook until wilted. Serve hot with extra parmesan.

Notes

  • Add chicken or vegan sausage for protein.
  • Store leftovers for up to 3 days.
  • Reheat with a splash of broth to maintain creaminess.
