Ingredients

1½ cups elbow macaroni
1 tbsp oil
1 tsp cumin seeds
1 medium onion, chopped
2 medium tomatoes, chopped or pureed
2 green chilies, chopped
3 garlic cloves, minced
1 tsp ginger, grated (optional)
¼ tsp turmeric
½ tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
Salt to taste
1 tbsp ketchup
1 cup mixed vegetables (peas, corn, bell peppers)
Fresh cilantro and lemon juice for garnish
Instructions
Cook macaroni until al dente. Drain and set aside.
In a skillet, heat oil. Add cumin, then onion, garlic, chili, and ginger.
Sauté until golden. Add tomatoes and cook till soft and oily.
