A classic Old Fashioned Macaroni Salad made with tender pasta, creamy dressing, chopped vegetables, and eggs for a smooth and balanced chilled side dish.

Ingredients

2 cups elbow macaroni, uncooked
1 cup mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon yellow mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup celery, finely diced
1/2 cup red bell pepper, diced
1/3 cup red onion, finely chopped
2 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
2 tablespoons fresh parsley, chopped
1/4 teaspoon paprika (optional)

Instructions

  1. Cook macaroni in salted boiling water until tender, then drain and rinse under cool water.
  2. In a bowl, mix mayonnaise, vinegar, mustard, sugar, salt, and black pepper until smooth.
  3. Add cooled macaroni and mix until coated.
  4. Add celery, bell pepper, onion, eggs, and relish. Fold gently.
  5. Stir in parsley and paprika if using.
  6. Adjust seasoning as needed.
  7. Chill in the refrigerator before serving and stir again prior to serving.

Notes

Store in a sealed container in the refrigerator. If the salad thickens, mix in a small amount of mayonnaise or milk before serving to adjust texture.
