1 lb ground turkey or lean beef
1 tbsp olive oil
1 bell pepper, chopped
1/2 onion, chopped
2 cloves garlic, minced
2 tsp no-sugar taco seasoning
1 cup canned diced tomatoes, drained
2 cups cauliflower rice
2 eggs, beaten
3/4 cup shredded cheddar cheese
Salt and pepper, to taste
Optional: chopped cilantro, avocado, Greek yogurt
Use Italian or Greek seasoning for variations. Add spinach or mushrooms for extra veggies. Freezes well.
