A creamy, cheesy One Pot Veggie Mac and Cheese that’s ready in just 25 minutes! Made with broccoli, carrots, peas, and spinach, this family-friendly vegetarian meal is as wholesome as it is comforting.
2 cups dry elbow macaroni or pasta of choice
1 tbsp butter or olive oil
½ cup onion, finely chopped
1 cup carrots, chopped
1 cup broccoli florets
½ cup frozen peas
2 cups vegetable broth
1 cup milk (dairy or plant-based)
1½ cups shredded cheddar cheese
½ cup mozzarella cheese
1–2 handfuls spinach, chopped
Salt and black pepper, to taste
In a large pot, sauté onion and carrots in butter for 3–4 minutes.
Add pasta, broth, milk, broccoli, peas, salt, and pepper. Stir and bring to a boil.
Reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally.
Once pasta is cooked, stir in cheese and spinach. Mix until creamy.
Serve hot, optionally garnished with herbs or chili flakes.
