Ingredients

12 oz pasta (penne, rotini, or shells)
1 small onion, diced
3 garlic cloves, minced
2 tbsp olive oil
2–3 cups chopped mixed vegetables (zucchini, bell peppers, mushrooms, carrots)
1 can (14.5 oz) diced tomatoes or 1½ cups cherry tomatoes
3½ cups vegetable broth
1 tsp dried Italian seasoning
½ tsp red pepper flakes (optional)
2 cups fresh spinach or kale
Salt & pepper, to taste
Optional: ¼ cup plant milk or 2 tbsp nutritional yeast
Instructions
In a large skillet, sauté onion and garlic in olive oil for 3–4 minutes.
Add chopped veggies and cook until slightly softened.
Add pasta, tomatoes, broth, seasoning, and chili flakes.
Stir and bring to a simmer. Cook uncovered for 12–14 minutes, stirring occasionally.
Stir in spinach and plant milk or nutritional yeast in final 2 minutes.
Let rest off heat for 5 minutes. Garnish and serve.
