Peacekeeper Cookies are soft, comforting cookies with buttery dough, subtle spices, and optional nuts, perfect for a cozy, melt-in-your-mouth treat.

Ingredients

1 cup unsalted butter, room temperature
3/4 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Optional: 1 teaspoon cinnamon or 1/2 teaspoon nutmeg
Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. Whisk together flour, baking soda, salt, and optional spices; fold into wet mixture.
  5. Optional: fold in chopped nuts.
  6. Scoop dough onto sheets, flatten slightly.
  7. Bake 12–14 minutes until edges are lightly golden.
  8. Cool 5 minutes on sheet, then transfer to wire rack.
  9. Store in airtight container up to 5 days.

Notes

Chill dough to prevent spreading. Optional spices or nuts can enhance flavor.
