A fresh and colorful summer salad combining sweet peaches, juicy cherry tomatoes, and creamy burrata, finished with olive oil and balsamic glaze.
3 ripe peaches, sliced
8 ounces burrata cheese
1 cup cherry tomatoes, halved
1/4 cup fresh basil leaves
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic glaze
Flaky sea salt, to taste
Freshly cracked black pepper, to taste
Optional: handful of arugula or microgreens
Optional: 1 teaspoon lemon juice
1. Wash and slice peaches into thin wedges.
2. Halve cherry tomatoes.
3. Tear basil leaves.
4. Arrange peaches and burrata on a platter, scatter tomatoes.
5. Add arugula or microgreens if desired.
6. Drizzle olive oil and balsamic glaze.
7. Season with salt and pepper; add lemon juice if using.
8. Serve immediately.
Use fresh, ripe peaches for best flavor; assemble just before serving; burrata can be substituted with fresh mozzarella.
