A fresh and elegant salad featuring peppery arugula, juicy pears, toasted nuts, and crumbled cheese, tossed in a sweet and tangy honey vinaigrette.

Ingredients

4 cups fresh arugula
2 ripe pears, thinly sliced
1/4 cup toasted walnuts or pecans
1/4 cup crumbled blue cheese, goat cheese, or feta
1/4 cup thinly sliced red onion
2 tablespoons honey
1 tablespoon Dijon mustard
3 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar or white wine vinegar
Salt and freshly cracked black pepper, to taste
Optional: 1/4 cup dried cranberries or pomegranate seeds

Instructions

1. Wash and dry arugula.

2. Thinly slice pears and red onion.

3. Toast nuts until fragrant.

4. Whisk honey, mustard, olive oil, and vinegar to make vinaigrette.

5. Toss arugula, pears, and onion with vinaigrette.

6. Top with nuts, cheese, and optional cranberries.

7. Serve immediately.

Notes

Use ripe pears for best flavor; assemble just before serving; cheese and nuts are customizable.
