Pecan Sandies are buttery, crumbly cookies with toasted pecans, tender centers, and optional powdered sugar coating for a classic melt-in-your-mouth treat.

Ingredients

1 cup unsalted butter, room temperature
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup pecans, toasted and chopped
Optional: powdered sugar for rolling

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Beat in vanilla extract.
  4. Whisk together flour and salt; gradually mix into butter mixture.
  5. Fold in toasted pecans.
  6. Scoop dough into balls and flatten slightly.
  7. Bake 12–15 minutes until edges are lightly golden.
  8. Cool on baking sheet for 5 minutes, then transfer to wire rack.
  9. Optional: Roll cooled cookies in powdered sugar.
  10. Store in airtight container up to 5 days.

Notes

Toast pecans for best flavor. Chill dough to maintain shape. Optional powdered sugar adds sweetness.
