A fresh pesto pasta salad made with tender pasta, juicy tomatoes, mozzarella, and basil pesto for a flavorful cold dish.

Ingredients

12 ounces rotini pasta
1 cup basil pesto
1 cup cherry tomatoes, halved
1 cup mozzarella balls or cubes
1/4 cup grated Parmesan
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh basil, chopped

Instructions

  1. Cook pasta until al dente, then drain and cool under cold water.
  2. In a bowl, combine pasta with pesto and olive oil.
  3. Add tomatoes, mozzarella, and Parmesan.
  4. Toss gently to combine.
  5. Season with salt and pepper.
  6. Garnish with basil.
  7. Chill before serving.

Notes

Add extra pesto if needed after chilling.
