Pineapple Chicken Tacos combine tender chicken, sweet pineapple, and fresh toppings for a vibrant and flavorful taco meal.

pounds boneless chicken breasts or thighs
1 cup fresh pineapple chunks
2 tablespoons olive oil
2 tablespoons lime juice
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
¾ teaspoon salt
½ teaspoon black pepper
8 small tortillas
1 cup shredded cabbage
1 avocado, diced
¼ cup chopped cilantro
¼ cup sliced red onion

Instructions

1. In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper.
2. Add chicken pieces and coat with the marinade.
3. Marinate for at least 20 minutes.
4. Heat a skillet over medium heat.
5. Cook chicken for 5–6 minutes until fully cooked.
6. Add pineapple chunks and cook for 2–3 minutes.
7. Warm the tortillas.
8. Fill tortillas with the pineapple chicken mixture.
9. Top with cabbage, avocado, cilantro, and red onion.
10. Serve immediately with fresh lime if desired.
