Easy Easter Pineapple Heaven Cake features a moist pineapple-infused cake topped with a creamy layer of sweetened cream cheese and whipped topping.

Ingredients

1 box yellow cake mix 15.25 ounces
1 can crushed pineapple 20 ounces with juice
3 large eggs
1/2 cup vegetable oil
8 ounces cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla extract
8 ounces whipped topping
Optional 1/2 cup shredded coconut
Optional 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9×13-inch pan.
  2. Mix cake mix, pineapple with juice, eggs, and oil until smooth.
  3. Pour batter into pan and bake 30 to 35 minutes.
  4. Cool completely.
  5. Beat cream cheese until smooth.
  6. Add powdered sugar and vanilla and mix well.
  7. Fold in whipped topping.
  8. Spread over cooled cake.
  9. Refrigerate at least 2 hours before serving.

Notes

Do not drain pineapple.
Chill thoroughly before slicing.
Store refrigerated up to four days.
