Sweet corn, cherry tomatoes, bell peppers, and red onion tossed with lime juice, olive oil, and fresh herbs for a refreshing, poolside-friendly salsa.

Ingredients

2 cups fresh or frozen corn kernels
1 cup cherry tomatoes, halved
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon chili powder
Optional: 1 jalapeño, seeded and finely chopped
Optional: 1/2 cup black beans

Instructions

  1. Prepare corn: cut from cob or thaw frozen corn. Sauté briefly for extra flavor if desired.
  2. Chop vegetables and optional ingredients.
  3. Combine corn, tomatoes, bell pepper, onion, and optional ingredients in a large bowl.
  4. Whisk olive oil, lime juice, salt, pepper, and chili powder; pour over salsa and toss gently.
  5. Let sit 10–15 minutes for flavors to meld.
  6. Serve chilled or at room temperature with chips, tacos, or grilled proteins.

Notes

Add avocado, roasted peppers, or mango for variation. Adjust spice with jalapeño or cayenne.
