Instructions

  1. Slice eggplants 1/2-inch thick. Sprinkle with salt, rest 10 minutes, then pat dry.
  2. Preheat air fryer to 375°F (190°C). Toss slices with oil, seasonings, and optional panko.
  3. Arrange in a single layer in the air fryer basket. Cook 12–15 minutes, flipping halfway.
  4. Garnish with parsley and serve with lemon or dipping sauce.
    Notes: Pat dry for crispiness, avoid overcrowding, use optional panko for extra crunch.
