A hearty one-pan dinner of seasoned ground beef, tender potatoes, and optional cheese — perfect for busy weeknights or cozy weekends.

Ingredients

  • 1 lb ground beef (85/15)
  • 34 medium russet or Yukon gold potatoes, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or butter
  • ½ cup beef broth or water
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried thyme or Italian seasoning
  • Salt and black pepper, to taste
  • Optional: ½–1 cup shredded cheese, bell pepper, parsley for garnish

Instructions

  1. Brown ground beef in a large skillet over medium heat. Drain fat and set aside.
  2. In the same skillet, heat olive oil and sauté onion and garlic (and bell pepper if using) until softened.
  3. Add diced potatoes, seasonings, and broth. Cover and cook for 10–12 minutes, stirring occasionally, until potatoes are tender.
  4. Return beef to pan and stir. Cook uncovered for 3–5 more minutes.
  5. Optional: Sprinkle cheese on top and cover until melted.
  6. Garnish with parsley and serve hot.

Notes

  • Add frozen vegetables or beans for variation.
  • Top with eggs for a breakfast-style twist.
