Creamy Boursin Chicken Pasta is a quick, indulgent dinner made with tender chicken, garlic herb cheese, and perfectly cooked pasta — all in under 30 minutes.

Ingredients

  • 1 lb chicken breast or thighs, cubed
  • 12 oz pasta (penne, rigatoni, fusilli)
  • 5.2 oz Boursin Garlic & Herb cheese
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt, pepper, garlic powder to taste
  • Optional: 2 cups baby spinach or 1 cup peas
  • Optional: grated Parmesan, lemon zest, parsley for garnish

Instructions

  1. Cook pasta until al dente. Reserve ½ cup pasta water.
  2. Sear seasoned chicken in oil and butter until golden; remove from pan.
  3. Sauté shallot and garlic in butter until soft.
  4. Stir in broth and Boursin; melt into creamy sauce.
  5. Add pasta, chicken, and spinach or peas. Toss to coat.
  6. Adjust with pasta water, salt, and pepper. Garnish and serve.

Notes

Use rotisserie chicken for shortcuts. Reheat gently with splash of broth. Great with garlic bread or salad.
