A creamy, tangy salad featuring fresh broccoli, shredded carrots, and a lightly sweet dressing. Perfect for potlucks or as a fresh side.

Ingredients

4 cups fresh broccoli florets
1/2 cup shredded carrots
1/4 cup red onion, finely chopped
1/4 cup toasted almonds or sunflower seeds
1/4 cup dried cranberries or raisins (optional)
1/2 cup mayonnaise
1/4 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Wash and cut broccoli into bite-sized florets. Blanch if desired.
  2. Whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and black pepper.
  3. Toast almonds or sunflower seeds until lightly golden.
  4. Combine broccoli, carrots, onion, nuts, and dried cranberries in a large bowl.
  5. Pour dressing over salad and toss gently.
  6. Refrigerate 20–30 minutes before serving.
  7. Add extra nuts or dried fruit before serving if desired.

Notes
