Cucumber Carrot Salad is a crisp and refreshing side dish made with fresh cucumbers, shredded carrots, and a light vinegar dressing.

Ingredients

2 large English cucumbers, thinly sliced
2 medium carrots, grated
3 tablespoons rice vinegar
1 tablespoon olive oil
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons sliced green onions (optional)
1 teaspoon sesame seeds (optional)

Instructions

1. Slice cucumbers thinly and pat dry.
2. Grate carrots and place in a large bowl.
3. Whisk rice vinegar, olive oil, honey, salt, and pepper.
4. Add cucumbers and carrots to the bowl.
5. Toss gently to coat.
6. Refrigerate 15 to 20 minutes before serving.
7. Garnish with green onions or sesame seeds if desired.

Notes

For extra crunch, add sliced red cabbage. Store dressing separately for meal prep.
