Ingredients

8 oz pasta (penne or rotini)
4 cups fresh spinach (or 1 cup frozen, thawed)
1/2 onion, chopped
3 cloves garlic
1 tbsp olive oil or butter
1/2 cup milk or light cream
1/2 cup grated cheese (cheddar, mozzarella, or paneer)
Salt and pepper, to taste
Pinch of nutmeg or red chili flakes (optional)
Fresh basil or parsley (for garnish)
Instructions
Blanch spinach, then blend with garlic and a splash of water into a smooth puree.
Cook pasta until al dente. Reserve 1/2 cup pasta water.
In a pan, sauté onion in olive oil until soft. Add spinach puree and cook 2–3 minutes.
Stir in milk, seasonings, and cheese. Cook until creamy.
Add cooked pasta and toss to coat. Adjust consistency with pasta water if needed.
Garnish and serve warm.
Notes
Use whole wheat pasta or lentil pasta for added nutrition.
Stir in paneer or mushrooms for extra protein.
Reheat with a splash of milk to maintain creaminess.
