Juicy grilled shrimp served with a sweet, tangy, and mildly spicy mango lime coulis, perfect for summer dinners or dinner parties.
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil, plus extra for brushing
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1 lime, juiced
Wooden or metal skewers (soaked if wooden)
Spicy Mango Lime Coulis:
1 large ripe mango, peeled and pitted
2 tablespoons lime juice
1 tablespoon honey or agave
1/4 teaspoon red chili flakes (adjust to taste)
Pinch of salt
1 teaspoon olive oil
Optional: 1 tablespoon fresh cilantro, chopped
1. Marinate shrimp with olive oil, spices, and lime juice for 10–15 minutes.
2. Blend mango, lime juice, honey, chili flakes, salt, and olive oil into a smooth coulis. Stir in cilantro if desired.
3. Preheat grill to medium-high. Thread shrimp onto skewers. Brush grates with oil.
4. Grill shrimp 2–3 minutes per side until opaque and lightly charred.
5. Drizzle coulis over shrimp and serve immediately.
Use ripe mango for best flavor. Adjust chili for heat preference. Can be made indoors on a grill pan.
