Quick One-Pot Creamy Chicken Pesto Pasta

A creamy, garlicky one-pot chicken pesto pasta made with tender chicken, penne, and a rich Parmesan-pesto sauce. Quick, comforting, and packed with bold flavor.

Ingredients

1 lb boneless chicken breast or thighs, diced
2 cups uncooked penne or rotini pasta
3 cups low-sodium chicken broth
1 cup heavy cream or half-and-half
½ cup basil pesto
½ cup freshly grated Parmesan cheese
23 cloves garlic, minced
1 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste
Optional: spinach, cherry tomatoes, red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear seasoned chicken 4–5 minutes. Remove.
  2. Add butter and garlic to the pot. Sauté 30 seconds.
  3. Add pasta and broth. Bring to boil, then simmer covered for 10–12 minutes.
  4. Return chicken. Stir in cream. Simmer 2–3 minutes.
  5. Add pesto and Parmesan. Stir until smooth and creamy.
  6. Add optional veggies and season to taste. Serve hot.

Notes

Use half-and-half for a lighter version. Swap chicken with mushrooms or shrimp. Stir in extra veggies to boost nutrition.
