This Easy Romesco Sauce blends roasted red peppers, fire-roasted tomatoes, almonds, garlic, and smoked paprika into a bold, smoky Mediterranean sauce ready in just 5 minutes. Perfect for meats, veggies, pasta, and more.
1 jar (12 oz) roasted red peppers, drained
½ cup fire-roasted tomatoes, drained
⅓ cup roasted, unsalted almonds
1 garlic clove
1½ tbsp red wine vinegar
1 tsp smoked paprika
¼ tsp sea salt
⅛ tsp black pepper
¼ cup extra virgin olive oil
Optional: red pepper flakes, cayenne, fresh herbs
Combine all ingredients in a blender or food processor.
Blend until smooth or desired consistency is reached.
Taste and adjust seasoning.
