Ingredients

3 medium cucumbers, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Italian seasoning
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 cup crumbled feta cheese

Instructions

  1. Slice cucumbers and red onion, halve cherry tomatoes, chop parsley. Combine in a large bowl.
  2. Whisk olive oil, vinegar, Italian seasoning, garlic, salt, and pepper.
  3. Pour dressing over vegetables and toss gently.
  4. Let sit 5–10 minutes for flavors to meld.
  5. Sprinkle feta cheese if using and serve chilled or at room temperature.

Notes
