Pineapple Cucumber Salad is a refreshing tropical side dish made with sweet pineapple, crisp cucumber, lime juice, and fresh herbs.
2 cups fresh pineapple, diced
1 large English cucumber, sliced
2 tablespoons fresh lime juice
1 teaspoon honey (optional)
2 tablespoons thinly sliced red onion
2 tablespoons chopped fresh cilantro
Pinch of salt
1 tablespoon finely diced jalapeño (optional)
1. Dice pineapple into bite-sized pieces.
2. Slice cucumber and pat dry.
3. Combine pineapple and cucumber in a bowl.
4. Add lime juice, honey, and salt. Toss gently.
5. Stir in red onion, cilantro, and jalapeño if using.
6. Chill 15 to 20 minutes before serving.
7. Stir gently and serve fresh.
Best served within 24 hours. Add mango or bell pepper for variation.
