This Creamy Cajun Sausage Pasta is a spicy, one-pot dinner loaded with smoky sausage, tender pasta, bell peppers, and a bold Cajun-spiced cream sauce.

Ingredients

  • 12 oz smoked sausage (Andouille or Kielbasa), sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 23 tsp Cajun seasoning (to taste)
  • 12 oz penne or rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Brown sausage, then remove and set aside.
  2. In the same pan, sauté onion and bell pepper until soft. Add garlic; cook 30 seconds.
  3. Stir in Cajun seasoning, pasta, broth, and cream. Mix well.
  4. Bring to a light boil. Reduce heat, cover, and simmer 10–12 minutes, stirring occasionally.
  5. Return sausage to pan. Stir in Parmesan. Cook 2–3 more minutes until creamy.
  6. Garnish with parsley and serve hot.

Notes

  • Add shrimp or spinach for variation.
  • Use half-and-half for a lighter sauce.
  • Reheat with broth or milk to revive the creaminess.
