Garlic Herb Chicken & Carrot Plate features oven-roasted chicken seasoned with garlic and herbs served with tender roasted carrots.

Ingredients

4 boneless skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
4 large carrots sliced
1 tablespoon lemon juice optional

Instructions

  1. Preheat oven to 400°F.
  2. Season chicken with oil, garlic, herbs, salt, and pepper.
  3. Toss carrots with oil and seasoning on baking sheet.
  4. Arrange chicken on sheet with carrots.
  5. Roast 25 to 30 minutes until chicken reaches 165°F.
  6. Stir carrots halfway through.
  7. Rest chicken and finish with lemon juice.
  8. Serve warm.

Notes

Do not overcrowd the pan.
Use a thermometer for accurate doneness.
Store leftovers refrigerated up to four days.
