12 oz rotini or penne pasta
1 lb ground beef or chicken (optional)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (10 oz) ROTEL tomatoes with green chilies
1 tbsp taco seasoning
4 oz cream cheese, softened
1/2 cup milk or broth
1 1/2 cups shredded cheddar cheese
Salt and pepper to taste
Optional toppings: cilantro, green onions, crushed tortilla chips
Refrigerate leftovers up to 3 days. Add extra broth when reheating for creamy consistency.
