1 block feta cheese (7 to 8 ounces)
6 large eggs
2 cups cherry tomatoes, halved
3 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh basil or parsley

Instructions

  1. Preheat oven to 400°F and lightly grease a baking dish with olive oil.
  2. Add cherry tomatoes to the dish and toss with olive oil, garlic, oregano, salt, pepper, and red pepper flakes.
  3. Place feta cheese in the center of the dish.
  4. Bake for 20 minutes until tomatoes soften and feta begins to melt.
  5. Stir the mixture to combine the softened feta and tomatoes.
  6. Create wells and crack eggs into the dish.
  7. Return to the oven and bake for 8 to 12 minutes until egg whites are set.
  8. Remove from oven, rest briefly, and garnish with fresh herbs before serving.
