A healthy and comforting Serbian one-pot rice and chicken dish, loaded with vegetables and Balkan spices. Light, simple, and perfect for any day of the week.
1 lb boneless chicken (breast or thighs), diced
1 cup long-grain white rice, rinsed
2 tbsp olive oil
1 onion, diced
2 bell peppers, chopped
1 carrot, diced
2 tomatoes (or 1/2 cup canned), chopped
3 garlic cloves, minced
2 cups chicken broth
1 tsp paprika
1/2 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley (for garnish)
Sauté onion, garlic, peppers, and carrot in olive oil for 5 minutes.
Add chicken, paprika, salt, and pepper. Cook until lightly browned.
Stir in rice, tomatoes, broth, thyme, and bay leaf.
Bring to a boil, reduce heat, and simmer covered for 18–20 mins. OR
Bake at 375°F for 30 mins covered.
Let rest 5 minutes, fluff rice, garnish with parsley. Serve hot.
Use chicken breast for leaner version
