This zesty sheet pan baked salmon features tender fillets roasted with fresh lemon garlic sauce and vegetables—all in one pan and ready in 30 minutes. Perfect for healthy weeknight dinners.

Ingredients

4 salmon fillets (6 oz each)
¼ cup olive oil
Juice and zest of 1 lemon
2 cloves garlic, minced
1 tsp Dijon mustard (optional)
1 tsp honey or maple syrup (optional)
Salt and pepper to taste
23 cups mixed vegetables (asparagus, broccoli, zucchini, cherry tomatoes)
Fresh parsley or dill for garnish

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment.
  2. Whisk olive oil, lemon juice/zest, garlic, mustard, honey, salt, and pepper.
  3. Toss vegetables with a bit of olive oil, salt, and pepper. Spread on sheet pan.
  4. Add salmon fillets and spoon lemon sauce over each.
  5. Bake for 15–18 minutes, or until salmon flakes easily and veggies are tender.
  6. Optional: Broil last 2 minutes for color. Garnish with fresh herbs and serve warm.

Notes

Don’t overcrowd the pan. Use any vegetables that roast well in 20 minutes. Frozen salmon works if thawed completely first.
