1 lb ground beef
4 medium Yukon gold potatoes, diced
½ onion, diced
1 bell pepper, diced (optional)
2–3 cloves garlic, minced
1 tsp smoked paprika
½ tsp dried oregano or thyme
Salt & black pepper, to taste
2 tbsp olive oil
Optional: ½ cup shredded cheese, chopped parsley
Instructions
Heat oil in a large skillet. Add diced potatoes, season, and cook 10–12 minutes until golden and fork-tender. Set aside.
In the same pan, brown the ground beef. Drain excess fat. Add paprika, oregano, salt, and pepper.
Add onions, garlic, and bell pepper. Sauté 4–5 minutes.
Return potatoes to skillet. Stir everything together and cook 2–3 more minutes.
Top with cheese and cover until melted. Garnish with parsley.
Notes
Use lean beef or swap in turkey for a lighter option.
Add spinach or corn for extra color and nutrients.
