Simple Ground Beef & Potatoes for Protein-Packed Dinners

A rustic, protein-packed one-skillet dinner with crispy potatoes and seasoned ground beef. Comforting, quick, and made with just a few pantry staples.

Ingredients

1 lb lean ground beef
3 medium russet potatoes, peeled and diced
1 small yellow onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper, to taste
12 tbsp olive oil
Optional: chopped parsley, shredded cheese, Worcestershire sauce

Instructions

  1. Peel and dice potatoes into 1/2-inch cubes. Soak in cold water for 10 minutes, then drain.
  2. Heat oil in a large skillet over medium-high. Add potatoes and cook undisturbed for 5 minutes. Stir and continue cooking until golden and tender, about 10–12 minutes. Remove from skillet.
  3. Add ground beef to the same skillet. Cook for 6–8 minutes, breaking it up until browned.
  4. Stir in onion and cook for 3–4 minutes until soft. Add garlic and cook 30 seconds more.
  5. Season with paprika, Italian seasoning, salt, and pepper. Mix well.
  6. Return cooked potatoes to skillet. Stir gently and cook for 3–5 minutes to blend flavors.
  7. Optional: Add parsley, shredded cheese, or a splash of Worcestershire before serving.

Notes

You can substitute ground turkey or sweet potatoes for variations. Add veggies or cheese as desired.
