Easy Peach and Raspberry Cobbler combines sweet peaches and tart raspberries under a golden biscuit-style topping for a warm and comforting dessert.

Ingredients

4 cups sliced fresh peaches
1 1/2 cups fresh raspberries
3/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract

For the topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup cold butter, cubed
1/2 cup milk
Optional coarse sugar for sprinkling

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and grease baking dish.
  2. Toss peaches, raspberries, sugar, cornstarch, lemon juice, and vanilla.
  3. Spread fruit mixture in dish.
  4. Mix flour, sugar, baking powder, and salt.
  5. Cut in butter until crumbly.
  6. Stir in milk to form soft dough.
  7. Drop dough over fruit.
  8. Sprinkle with coarse sugar.
  9. Bake 35 to 45 minutes until golden and bubbling.
  10. Cool 15 minutes before serving.
