Simple Roasted Vegetables with Balsamic Reduction is a colorful, oven-roasted side dish featuring tender vegetables with caramelized edges and a rich, slightly sweet balsamic glaze.

Ingredients

2 cups broccoli florets
1 zucchini, sliced
1 red bell pepper, chopped
1 yellow squash, sliced
1 red onion, cut into wedges
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/3 cup balsamic vinegar
1 tablespoon honey

Instructions

  1. Preheat oven to 425°F.
  2. Place vegetables on a baking sheet and drizzle with olive oil.
  3. Season with salt, pepper, and garlic powder, then toss to coat evenly.
  4. Spread vegetables in a single layer.
  5. Roast for 20–25 minutes, stirring halfway through.
  6. While vegetables roast, simmer balsamic vinegar and honey in a small saucepan over medium heat for 5–7 minutes until slightly thickened.
  7. Remove vegetables from oven once edges are browned and tender.
  8. Drizzle balsamic reduction over vegetables before serving.
