Ingredients

1.5 lbs boneless chicken thighs or drumsticks
1 1/2 cups white rice, rinsed
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
1 bell pepper, diced
3 cups chicken broth or water
1 tsp paprika
1 tbsp tomato paste or 1 chopped tomato
1 bay leaf
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
Heat oil in a pot. Brown chicken on both sides, then remove.
Sauté onion, garlic, carrots, and pepper until soft.
Stir in rice, paprika, bay leaf, and tomato paste. Cook 1–2 minutes.
Return chicken, pour in broth. Bring to a boil, cover, reduce heat.
Simmer for 20–25 minutes. Let rest 10 minutes before serving.
