Simple Weeknight Side: Garlic Parmesan Potatoes

Crispy baked potato wedges tossed in garlic, herbs, and Parmesan—perfectly golden and packed with flavor.

Ingredients

3 large russet potatoes
3 tbsp olive oil
3 garlic cloves, minced
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
½ tsp paprika (optional)
½ cup grated Parmesan cheese
Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F. Line and grease a baking sheet.
  2. Cut potatoes into 8 wedges each.
  3. Toss wedges with olive oil, garlic, salt, pepper, seasoning, and paprika.
  4. Add Parmesan and toss again.
  5. Arrange on baking sheet, skin-side down.
  6. Bake 35–40 min, flipping halfway, until crisp and golden.
  7. Garnish with parsley and serve hot.

Notes

Soak wedges in cold water before baking for extra crispiness. Serve with dipping sauce.
