A cheesy, low-carb pizza casserole made with a savory zucchini crust and topped with all your favorite pizza fixings. Gluten-free, comforting, and perfect for meal prep.

For the Crust:

  • 4 cups shredded zucchini (about 23 medium)
  • 2 eggs
  • 1 cup shredded mozzarella or cheddar
  • ¼ cup grated Parmesan (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder or Italian seasoning (optional)

Toppings:

  • ¾ cup pizza sauce
  • 1½ cups shredded mozzarella
  • 20 slices pepperoni (or other toppings of choice)
  • Optional: mushrooms, olives, bell peppers

Instructions

  1. Preheat oven to 400°F. Grease a 9×13-inch baking dish.

  2. Grate zucchini and squeeze out all excess moisture.

  3. In a bowl, mix zucchini, eggs, cheese, seasonings. Press into dish.

  4. Bake crust 20–25 minutes, until set and golden.

  5. Spread sauce over crust, then add cheese and toppings.

  6. Return to oven and bake 10–15 minutes until bubbly.

  7. Broil for 2–3 minutes for a crispy top (optional).

  8. Rest 5 minutes before slicing and serving.

Notes

  • Drain zucchini well to avoid soggy crust.
