Slow Cooker Beef Coconut Curry features tender beef simmered slowly in creamy coconut milk with curry spices, garlic, ginger, and vegetables for a rich and comforting meal.

2 pounds beef chuck roast or stew meat
1 can (13.5 oz) coconut milk
1 cup beef broth
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons curry paste or 1½ tablespoons curry powder
1 tablespoon fish sauce
1 tablespoon brown sugar
1 cup carrots, sliced
1 red bell pepper, sliced
Salt and black pepper to taste

Instructions

1. Cut beef into bite-size cubes if using chuck roast.
2. Place beef into the slow cooker.
3. Add onion, garlic, ginger, and curry paste.
4. Pour coconut milk and beef broth over the ingredients.
5. Stir in fish sauce and brown sugar.
6. Add carrots and bell pepper.
7. Cover and cook on low for 7–8 hours or high for 4–5 hours.
8. Stir the curry before serving and adjust seasoning if needed.
9. Serve over rice with fresh herbs if desired.
10. Enjoy warm.
