Tender slow-cooked Cajun-spiced chicken in a creamy garlic-Parmesan sauce, tossed with pasta and bell peppers — all made effortlessly in your Crock Pot!

Ingredients

  • 1.52 lbs chicken breasts
  • 1½ tbsp Cajun seasoning
  • Salt & pepper
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 4 oz cream cheese (or 1 cup heavy cream)
  • 8 oz penne or rotini pasta
  • ½ cup grated Parmesan cheese
  • Optional: diced tomatoes, parsley, red pepper flakes

Instructions

  1. Season chicken and place in Crock Pot with peppers, garlic, and broth.
  2. Cook on LOW 5–6 hrs or HIGH 3–4 hrs.
  3. In last 30–60 mins, stir in cream cheese or cream.
  4. Cook pasta separately, drain, and add to Crock Pot.
  5. Shred chicken, add Parmesan, and stir everything to combine.
  6. Serve hot with garnish of choice.

Notes

For extra spice, increase Cajun seasoning or add chili flakes. Store leftovers in the fridge for up to 4 days.
