Slow Cooker Mediterranean Chicken is a flavorful dish made with tender chicken, tomatoes, olives, garlic, and herbs slowly cooked in a light broth and finished with fresh lemon.

Ingredients

pounds boneless chicken thighs or breasts
1 cup cherry tomatoes
½ cup Kalamata olives, pitted
1 small red onion, sliced
4 cloves garlic, minced
1 cup chicken broth
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon dried basil
¾ teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice

Instructions

1. Slice the red onion and mince the garlic.
2. Place onions in the bottom of the slow cooker.
3. Place chicken on top of the onions.
4. Add cherry tomatoes, olives, and garlic around the chicken.
5. Sprinkle oregano, thyme, basil, salt, and pepper over the ingredients.
6. Drizzle olive oil and pour chicken broth around the mixture.
7. Cover and cook on low for 6 hours or high for 3–4 hours.
8. Stir in lemon juice near the end of cooking.
9. Taste and adjust seasoning if needed.
10. Serve chicken with the tomato and olive mixture spooned over the top.

Notes

Adding artichoke hearts or bell peppers can provide additional Mediterranean flavor and texture.
