1½ lbs boneless chicken thighs or breasts, cut into chunks
1 cup plain yogurt
2 tbsp lemon juice
2 tbsp oil
1 tbsp garlic paste
1 tbsp ginger paste
2 tsp ground cumin
2 tsp ground coriander
1 tsp garam masala
1 tsp paprika or Kashmiri chili powder
½ tsp turmeric
1 tsp salt
Optional: red food coloring
Skewers (soaked if wooden)
Instructions
In a large bowl, whisk together all marinade ingredients.
Add chicken, mix to coat, cover, and refrigerate for at least 4 hours or overnight.
Thread chicken onto skewers.
Grill or broil 4–5 minutes per side until charred and cooked through (165°F internal temp).
Serve hot with chutney, rice, or naan.
Notes
Use Greek yogurt for extra creaminess.
Add fresh herbs or chili for flavor variations.
