Pecan Pie Bars are buttery shortbread bars topped with a gooey, caramel-like pecan layer for an easy-to-slice, indulgent dessert.

For the crust:
1 cup unsalted butter, room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt

For the pecan filling:
1 cup packed brown sugar
1/2 cup light corn syrup
2 large eggs
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups pecans, toasted and chopped

Instructions

  1. Preheat oven to 350°F and line a 9×13-inch pan with parchment paper.
  2. Cream butter and sugar for the crust.
  3. Mix in flour and salt until crumbly and press into the pan.
  4. Bake 15–18 minutes until lightly golden.
  5. Whisk together brown sugar, corn syrup, eggs, melted butter, vanilla, and salt.
  6. Fold in toasted pecans.
  7. Pour filling over crust and spread evenly.
  8. Bake 25–30 minutes until filling is set.
  9. Cool completely; optionally drizzle chocolate or sprinkle sea salt.
  10. Cut into squares and store in airtight container up to 5 days.

Notes

Toast pecans for flavor. Use parchment for easy removal. Avoid overbaking to keep filling gooey.
