1 cup plain full-fat yogurt
3 large eggs
1/2 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon olive oil or melted butter
1/2 teaspoon garlic powder (optional)
1 tablespoon chopped fresh herbs (optional)

Instructions

  1. Preheat oven to 350°F and prepare a loaf pan with parchment paper or light greasing.
  2. In a bowl, whisk eggs until fully combined.
  3. Add yogurt and olive oil or melted butter, then mix until smooth.
  4. In a separate bowl, combine almond flour, baking powder, salt, and optional garlic powder.
  5. Add dry ingredients to wet ingredients and mix until a thick batter forms.
  6. Fold in optional herbs if using.
  7. Pour batter into the loaf pan and smooth the top.
  8. Bake for 35 to 45 minutes until golden and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a rack to cool fully before slicing.
