Juicy Buffalo chicken, crisp veggies, and creamy dressing wrapped in a soft tortilla for a bold, spicy dinner for two—ready in just 20 minutes.

Ingredients

1 lb boneless chicken breast or thighs, diced
1 tbsp oil
¼ cup Buffalo sauce
2 large flour tortillas
½ cup shredded lettuce
½ cup diced tomatoes
2 tbsp ranch or blue cheese dressing
¼ cup shredded cheddar or jack cheese (optional)
Salt and pepper to taste

Instructions

  1. Heat oil in skillet over medium-high. Cook chicken until golden and cooked through, 6–8 minutes.
  2. Lower heat, stir in Buffalo sauce, and simmer 1–2 minutes.
  3. Warm tortillas until soft.
  4. Spread dressing on each tortilla, then layer lettuce, tomato, and cheese.
  5. Divide chicken between wraps.
  6. Fold, roll, and slice in half. Serve immediately.

Notes

Use tamari and dairy-free dressing for gluten- and dairy-free versions. Leftover chicken works well for faster prep.
