12 oz spaghetti
1 lb boneless chicken breast or thighs, sliced
2 tbsp Cajun seasoning, divided
2 tbsp olive oil
2 tbsp butter
1 bell pepper, thinly sliced
3 garlic cloves, minced
1 cup heavy cream
1/3 cup chicken broth (optional)
1/2 cup freshly grated Parmesan
Salt and pepper, to taste
2 tbsp chopped parsley or sliced green onion
1/2 cup reserved pasta water
Instructions
Cook spaghetti in salted water until al dente. Reserve 1/2 cup water, then drain.
Season chicken with 1 tbsp Cajun seasoning. Sear in hot oil and butter until cooked through. Set aside.
In the same pan, sauté bell pepper and garlic for 3–4 minutes.
Add cream and broth. Simmer 5 minutes until slightly thickened.
Stir in Parmesan and remaining Cajun seasoning.
Return chicken to pan, add pasta, and toss to coat. Use pasta water to loosen sauce if needed.
Garnish with parsley or green onions. Serve hot.
Notes
Adjust Cajun seasoning to your spice level.
Substitute shrimp or sausage for chicken.
Add spinach, mushrooms, or cherry tomatoes for extra veggies.
