10–12 oz pasta (rigatoni or penne)
12 oz spicy Italian sausage
1 tbsp olive oil
3 cloves garlic, minced
½ tsp red pepper flakes (optional)
1 (14–15 oz) can crushed tomatoes
½ cup heavy cream
½ cup Parmesan cheese, grated
Salt & pepper to taste
Fresh basil or parsley, to garnish
1 cup reserved pasta water
Cook pasta al dente, reserve pasta water, and drain.
Brown sausage in oil, breaking it up. Cook until no longer pink.
Add garlic and chili flakes; sauté briefly.
Stir in crushed tomatoes. Simmer 5 minutes.
Add cream and Parmesan. Simmer until thickened.
Toss pasta in sauce. Add pasta water as needed.
Garnish and serve hot.
