A hearty, spicy pasta dish made with seared hot Italian sausage, garlic, tomato sauce, and spinach tossed with penne. A flavorful, protein-rich dinner perfect for cozy weeknights.
1 lb hot Italian sausage, sliced or crumbled
12 oz penne or rigatoni pasta
1 tbsp olive oil
1 small onion, chopped
4 garlic cloves, minced
½ tsp red pepper flakes
1 (28 oz) can crushed tomatoes
2 cups fresh spinach
Salt and black pepper, to taste
¼ cup chopped parsley (optional)
Optional: grated Parmesan cheese
½ cup reserved pasta water
Cook pasta until al dente. Reserve ½ cup water and drain.
In a skillet, cook sausage in olive oil until browned. Remove and set aside.
Sauté onion and garlic with red pepper flakes until soft.
Add crushed tomatoes, salt, and pepper. Simmer 10–12 minutes.
Return sausage to pan. Add pasta and spinach. Toss everything together.
Add pasta water as needed to loosen the sauce.
Garnish with parsley and Parmesan. Serve hot.
Use mild sausage for less heat.
Add cream for a creamy tomato sauce.
Store leftovers in fridge up to 3 days.
