A hearty, spicy pasta dish made with seared hot Italian sausage, garlic, tomato sauce, and spinach tossed with penne. A flavorful, protein-rich dinner perfect for cozy weeknights.

Ingredients

  • 1 lb hot Italian sausage, sliced or crumbled

  • 12 oz penne or rigatoni pasta

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 4 garlic cloves, minced

  • ½ tsp red pepper flakes

  • 1 (28 oz) can crushed tomatoes

  • 2 cups fresh spinach

  • Salt and black pepper, to taste

  • ¼ cup chopped parsley (optional)

  • Optional: grated Parmesan cheese

  • ½ cup reserved pasta water

Instructions

  • Cook pasta until al dente. Reserve ½ cup water and drain.

  • In a skillet, cook sausage in olive oil until browned. Remove and set aside.

  • Sauté onion and garlic with red pepper flakes until soft.

  • Add crushed tomatoes, salt, and pepper. Simmer 10–12 minutes.

  • Return sausage to pan. Add pasta and spinach. Toss everything together.

  • Add pasta water as needed to loosen the sauce.

  • Garnish with parsley and Parmesan. Serve hot.

Notes

  • Use mild sausage for less heat.

  • Add cream for a creamy tomato sauce.

  • Store leftovers in fridge up to 3 days.
