Spinach and Feta Pinwheels (gluten-free) are rolled savory spirals filled with spinach, feta, and herbs in a gluten-free dough.

Ingredients

Gluten-free flour, eggs, yogurt, olive oil
Spinach, cooked and drained
Feta cheese
Garlic, oregano, black pepper
Baking powder, salt

Instructions

  1. Prepare dough and let it rest.
  2. Cook and drain spinach.
  3. Mix filling ingredients.
  4. Roll dough into a rectangle.
  5. Spread filling, roll into a log, and slice.
  6. Bake at 375°F for 18–22 minutes.

Notes

Remove excess moisture from spinach for best results.
