Mediterranean Spinach Cheese Feta Quiche is a savory baked egg dish made with spinach, feta cheese, herbs, and a creamy egg base, resulting in a flavorful, protein-rich quiche.

1 cup milk or cream
1 1/2 cups fresh spinach, chopped and cooked
1 cup feta cheese, crumbled
1/2 cup shredded mozzarella
1/4 cup onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
Optional: sun-dried tomatoes or olives

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Sauté onion in olive oil, then add garlic and cook briefly.
  3. Add spinach and cook until wilted; drain excess moisture.
  4. In a bowl, whisk eggs, milk, salt, pepper, and herbs.
  5. Stir in spinach mixture, feta, mozzarella, and optional add-ins.
  6. Pour into the baking dish and spread evenly.
  7. Bake for 35–45 minutes until set and lightly golden.
  8. Rest for 10 minutes before slicing and serving.
